For treatment of barrels to remove excess tannin. Required usage of 1 pound per every 5 gallons of hot water. 50 gallon barrel will require 10 lbs of Barolkleen. New barrels need to be treated in the following way:
* Fill the barrel with a solution of Barolkleen mixed to a strength of 1 pound to every 5 gallons of hot water & leave for at least 48 hours.
* Drain the barrel & flush it with clean water until water runs clear from the barrel.
* Mix a solution of two ounces of sodium metabisulfite & one ounce of citric acid in two gallons of warm water and pour this solution into the barrel. Roll it around so it comes in contact with all interior surfaces.
* Drain the sulphite solution, rinse the barrel well & immediately fill with wine.

Campden Tablets (sodium metabisulfite): While sodium metabisulfite is less expensive than potassium metabisulfite, it does contain sodium ions, which some winemakers would rather avoid. Used just as potassium metabisulfite.

Releases sulphur dioxide, which acts as a sterilant and antioxident. Each tablet contains 550 mg of active sulphite/tablet. May be used at each racking also to retard oxidation. 50 ct package.
