Maple Syrup is a wonderful, natural sugar to be eaten with anything that requires a bit of sweetness. We like the rich maple flavor of the darker syrup for the essence that it imparts to our favorite meals. Add it to your favorite Baked Bean recipe, create a beautiful glaze for Baked Ham or make an outstanding Pumpkin Pie, while not forgetting that stack of pancakes or waffles.
Once the sugar maple trees are tapped in the late winter and the sap begins to run, they gather it up and boil it down to a beautiful amber syrup. On average, depending on the sugar content of the sap, it takes 10 gallons of sap to make 1 quart of Maple Syrup. Once the the weather begins to warm and the trees start to sprout the season is over. Man and Mother Nature must work together to make the most of the short season when this crop is produced. It is a great time of year to be down in the deep woods watching the animals wake up and become active, the streams begin to thaw and birds return for the summer season.
